Besides being healthy, tasty and easy to prepare, this salad is quite practical because it can be served hot and cold as well. I usually like to serve it as cold side dish for fish. Nice, simple and refreshing.

Cucumber Fritters

Cucumber Fritters

Cucumber is an ideal summer food, has a large water content and its taste is almost neutral. When combined with flour and eggs, you will get nice cucumber fritters that are crispy and delicious. Everyone can make plain fritters with eggs and flour, so this recipe with cucumbers is easy as well. Cucumber fritters are great when you want a quick breakfast and you're tired of scrambled eggs and toast. You can also make them as a side dish for lunch or dinner. They are also excellent as a quick snack if you're craving for something salty. Try and see how easy it is to make it.

Ingredients:
·         3 large cucumbers
·         3 eggs
·         Butter, softened 1 tablespoon
·         A pinch of baking soda
·         Buckwheat flour 1 cup
·         Black pepper
·         Salt
·         Olive oil for frying

Directions:
1.    Peel and grate the cucumbers, press out and discard the juice.
2.    In a large bowl combine eggs, butter, baking soda and flour. Mix well and stir in grated cucumbers. Add enough flour to make a soft batter (like thick pancake mix). Season with salt and pepper.
3.    Drop a spoonful of mixture in hot oil and fry on high heat. You can fry 5-6 fritters at a time.
4.    Place fritters on paper towel-lined plate.

Baked Pasta With Mushrooms

Baked Pasta With Mushrooms

If you need to save up a little, than this inexpensive dish is a good choice for lunch or dinner. Baked pasta is a meal that everyone will know how to prepare. It’s easy, just parboil pasta, perhaps seashell or penne, and add cooked mushrooms, eggs and cheese. You’ll need 30 min only. Mix everything up and it’s ready for baking in the oven. Although when you make this dish often, after a time you can get bored with it. Change the recipe than. Instead of mushrooms add minced meat, or some different vegetables. I like to make this pasta with zucchinis, or just with cheese. In any case it’s a pretty cheap meal that tastes good.

Ingredients:
·         Seashell pasta 500g /1 pound/
·         Mushrooms 1 kg /2 pounds/
·         4 eggs
·         Milk 500ml /2 cups/
·         Cheese 250g /7 oz/
·         Oil 5 tablespoons
·         Salt

Directions:
1.    Put pasta in boiling water and add 1 tablespoon salt. If you don’t want your pasta to stick, add 3 tablespoon of oil in water. While pasta is cooking prepare the mixture.
2.    In a bowl whisk 4 eggs, milk and cheese. Add half teaspoon of salt.
3.    Add little oil in the pan and fry the mushrooms.
4.    When mushrooms get golden color remove the pan from the heat. Stir in fried mushrooms with pre-made mixture.
5.    When pasta is cooked, strain it unwashed, and pour into a deep baking tray. Pour mixture over pasta.
6.    Bake it in oven at 200C /390 F/ for 25 min.

Vegetarian Beer Rolls

Vegetarian Beer Rolls

I made this recipe now for the first time. I tried it a couple of nights ago at my friends and I really liked it, although this recipe is my variation. The rolls are light and doesn’t take that much to bake them in the oven. The preparation is always longer than baking, but it’s worth it. Beer gives great taste to the dough and grated lemon gives a little sour taste. Filling with marmalade is a great contrast to beer taste, the mixture will surprise you. And than sprinkle with sugar, which gives perfect taste to the rolls. Beer rolls are nice for dessert or snack.

Ingredients:
  • Beer 250ml / 1.1 cups/
  • All-purpose flour 7 cups
  • Oil 200ml /0.8 cup/
  • Grated lemon crust
  • 1 Baking powder 12g /2 teaspoon/
  • Marmalade 100g /3.5 oz/
  • Powdered sugar 50g /1.7 oz/
  • 1 dry active yeast 7g / 0.2 oz/
Directions:
1.    Combine in a large bowl oil, yeast, beer, baking powder, grated lemon, and flour.
2.    Mix everything well, and knead the dough until it gets smooth. The dough shouldn’t stick to a bowl.
3.    Divide and form the dough into few pieces. Cut each peace into 8 parts. Smear marmalade over each piece equally and roll the dough.
4.    Place rolls in an oiled baking tray and bake it in the oven at 390 degree for 25 min. Sprinkle rolls with sugar powder.
