Neptune Egzotic Seafood Plate

Here is a gorgeous recipe with various seafood, grilled and with vegetables. Seafood is a usual meal in Montenegro, at least in areas surronding Adriatic Sea. Many of us eat salmon, tuna, shellfish and we don’t really know how much is fish actually healthy. We eat fish because is tasty, but seafood is a source of vitamins and minerals, and has plenty omega-3 fatty acids. So try this healthy and very delicious seafood plate combined with few kinds of fresh fish. 

Ingredients:
·         Octopus, cooked and cut into small bites 200g /7 oz/
·         Squid, each cleaned, cut into thin pieces 300g /10.5 oz/
·         Shrimps, fresh 300g /10.5 oz/
·         Mussel’s 4-5 pieces
·         St Pierre (John Dory) fish, filet cut into slices 300g /10.5 oz/
·         1 Eggplant, cut into slices
·         1 Zucchini, cut into slices
·         1 Tomato, cut into slices
·         1 Red pepper, cut into slices
·         Mushrooms, cut into small slices 100g /3.5 oz/
·         1 Lemon
·         1 Leaf of lettuce
·         Salt
·         Black pepper

Directions:
1.    Preheat the outdoor grill for high heat, and lightly oil grate.
2.    Place octopus on grill, add squids, shrimps, John Dory filets and mussels. Stir and cook all fish on both sides for 10 min.
3.    When the fish is done place vegetables on grill. Cook eggplant, zucchini, tomato, red pepper and mushrooms for 10 min. Cook on both sides on high heat until golden, brown.
4.    On a large plate place lettuce and arrange all the cooked fish and vegetables. Decorate with lemon.

Baked Sea Bass With Potatoes

Next to sea bream, bass is the most valued fish in the Adriatic Sea. Sea bass is a predator that can survive in different and extreme conditions, and quickly adapt. It can grow to a 1 meter length, and achieve 15 kilo of weight, though these specimens are very rare. Mostly caught sea bass has less than 1 kilo. Usually it can be found in ports, next to the pears, and one of the most favorite places for sea bass is river deltas. This is my favorite fish recipe to prepare and I usually like to bake it in the oven with vegetables. 

Ingredients:
  • Bass 500g /1.1 pounds/
  • Onions 200g /7 oz/
  • Eggplant 100g /3.5 oz/
  • Zucchini 100g /3.5 oz/
  • Button mushrooms 200g /7 oz/
  • Tomatoes 100g /3.5 oz/
  • Bell pepper 100g /3.5 oz/
  • Potato 200g /7 oz/
  • Olives 50g /1.7 oz/
  • Olive oil 100ml / ½ cup/
  • Garlic 1 clove
  • 1 tablespoon tomato puree
  • 1 Lemon juice
  • Salt
  • Pepper
Directions:
1.    Clean sea bass, season it with salt, pepper and lemon.
2.    Fry bass on both sides in the pan for 5 min, until it gets golden crust. 
3.    Cut all vegetables into small slices.
4.    Cook onion in a deep saucepan. Add eggplant, zucchini, mushrooms, paprika, olives and potatoes. When added, potatoes should be sliced ​​thin.
5.    In saucepan add garlic, salt, pepper and tomato puree. Then cook on medium heat for 15 minutes. 
6.    When vegetables are cooked, pour into a deep baking tray.
7.    Cover the top with tomato slices. Put the bass on vegetables and bake in oven for 15 min at 200 C /392 F/.

Mussels In White Wine Sauce

In some parts of Adriatic Sea where the water is extremely clean mussels are cultivated. They are easily accessible to the residents surrounding Adriatic. Mussels are often and favorite dish in my city. Usually prepared with white wine, also personally I prefer their taste in white wine, it’s very delicious. These mussels took only 15 min from pot to plate. Prepared with fresh tomato, garlic and parsley and cooked in white wine, they taste excellent. Try it; it’s not difficult to cook. 

Ingredients:
·         Mussels 1 kg /2.2 pounds/
·         Onions 200g /7 oz/
·         Tomato 200g /7 oz/
·         Garlic 20g / 0.7 oz/
·         1 Lemon
·         Olive oil 2 dl /1 cup/
·         White wine 4 dl /2 cups/
·         Pepper in grain
·         Parsley
·         Salt
  
Directions:
1.    Cut onion thinly, then garlic, parsley and tomatoes. Cut lemon into slices. 
2.    Wash all mussels. 
3.    In a deep pot heat up the olive oil, add onions and fry it at low heat for 5min. Add tomatoes in the pot, garlic and parsley and fry for 5 min. 
4.    Add mussels in a pot and lemon slices, pepper in grain, salt and white wine. 
5.    Cook all ingredients in a closed pot, until the mussels open. When they open the dish is over. Serve mussels in a deeper bowl.
