Roasted Veal Under Baking Lid

Veal under baking lid is a traditional dish of Montenegro. I have to mention one of my favorite meals that take place at the top of my hierarchy of best dishes and also best cooking methods. Food prepared under baking lid is very tasty, rich with flavors and a real treat for gourmets. No wonder that this baking method is getting more popular in other Mediterranean countries.
Baking method:
Baking lid is a vessel made of ceramic or metal that can withstand very high temperatures. On the baking lid must be a cover that goes over the edge of lid for 2-3 cm. For baking are used live coals. For you to start baking on this way - is to prepare first 4-5kg live coals. You can use baking lid in any area like fireplace, wood stove or open space, which has a base in the form of metal or stone plate. Take apart live coals to create a layer of 2-3cm thick and as wide as the baking lid. Put the ingredients for the dish that you’re making in the baking lid and place it under live coals. 
Note: If you are not able to bake under baking lid, you can bake every dish in electric or gas oven.

Ingredients:
·         Veal shoulder blade 3 kg /6.6 pounds/
·         Potatoes 2 kg /4.5 pounds/
·         Mushrooms 200g /7 oz/
·         Carrots 100g /3.5 oz/
·         Onions 300g /10 oz/
·         Olive oil 3dl /1.2 cups/
·         1 bell pepper
·         Fresh twigs of rosemary 2-3
·         2 cloves garlic
·         White wine 0.5 L /2.1 cups/
·         Water 0.5 L /2.1 cups/
·         Salt
·         Pepper

Directions:
1.    Cut meat into 3 equal pieces. Wash all vegetables. 
2.    Wash the rosemary and garlic. 
3.    In oiled deep baking lid place vegetables and put over meat spiced with salt and pepper. 
4.    Pour over water and wine, and cover the lid.
5.    Place it over live coals. Also put live coals on top of a baking lid. Leave it to bake for 60 minutes. Then remove live coal from the cover, open the lid and turn the meat to the other side.
6.    Re-cover the lid and place again live coals on top. Continue baking for next 40min. 
7.    Remove baking lid from live coals. Take out the ingredients from the lid. Cut the meat on thin pieces and divide vegetables into two halves. One half of the vegetables leave as a side dish. 
8.    Second half of the vegetables put into blender to get a tasty sauce for the meat. Spice up the sauce with salt and pepper and serve the meal.

I know it takes a lot of time to prepare this veal but once you taste it you’ll see it’s worth waiting. Veggies taste delicious and with the sauce over…Gorgeous

Greek Salad

I ordered this salad the other day at a restaurant and liked very much how it went with my main course. So I tried it at home, and it took me less than 10 minutes to make it. The salad is terrible simple it only goes 3 types of fresh vegetables and few leaves of lettuce. With the addition of feta cheese it’s a very nice combination of veggies, and I added black olives. I’m a big fan of olives, especially black so I sliced them and tossed on top. Everyone can make this salad. You only need 10 min to slice the vegetables and place them in a bowl. This is a nice vegetarian salad, very refreshing and quick to make. Greek salad is good if you’re watching your weight; it has little calories and can keep you full till next meal.  

Ingredients:
·         Tomatoes 100g /3.5 oz/
·         Cucumber 50g /1.7 oz/
·         Bell pepper 50g /1.7 oz/
·         1 onion
·         Feta cheese 50g /1.7 oz/
·         Lettuce 3 leaves
·         10 black olives
·         Olive oil
·         Aceto balsamic / vinegar/

Directions:
1.    Cut tomatoes, cucumbers and peppers into cubes size 1,5 x1,5cm.
2.    Cut onion into slices. Cut feta cheese into the rectangular shape size 2x1cm. Wash lettuce and squeeze out the black olives.
3.    Mix in a salad bowl tomatoes, cucumber, pepper and season it with olive oil, aceto balsamic and add salt. 
4.    Place lettuce on the plate first, and place spiced vegetables in the dome-shape. On top of vegetables add feta cheese equally, then the onion slices and olives. Sprinkle with oregano. For a nicer decoration on top, add a twig of French parsley.
