Potato, Egg And Pea Salad

This salad is very simple, just cooked potatoes, peas, carrots and eggs spiced with mayonnaise, lemon juice and sour cream dressing. Besides being healthy, tasty and easy to prepare, this salad is quite practical because it can be served hot and cold as well. I usually like to serve it as cold side dish for fish. Nice, simple and refreshing. 



Ingredients:
·         4 medium sized potatoes, peeled
·         3 eggs, hard boiled, diced
·         ½ cup frozen peas, thawed
·         2 onions, sliced thinly
·         2 small carrots, peeled and cubed
·         1/3 cup mayonnaise
·         1 tablespoon sour cream
·         ½ lemon, juiced
·         3 tablespoons mustard
·         1 tablespoon olive oil
·         Black pepper
·         Salt


Directions:
1.    Place potatoes in a large saucepan and cover with water, add 1 teaspoon of salt. Bring to a boil over high heat. Reduce heat to medium and cook potatoes for 10 min until tender.
2.    Add peas and cubed carrots and cook for 2 min. Drain vegetables.
3.    To make salad dressing - combine in a bowl mayonnaise, sour cream, lemon juice, olive oil and mustard. Mix and add pepper and salt in a bowl.
4.    In a large bowl combine cooked potatoes, peas and carrots with eggs and onions. Gently stir in salad dressing until blended. Refrigerate until chilled and serve.

My Olivier, Russian Salad

When in my beautiful little city approaches the time around New Year and all the holidays come, than it’s time to visit all close relatives, family and friends. Everywhere are prepared various specialties, pastries, meats, sauces and what not, but almost on everyones table Russian salad will be served. It’s typical and almost mandatory for all Balkan countries to have Russian salad for the holidays. I tried at my relatives and friends all sorts of versions of Russian salad. In addition to main ingredients, which are veggies like potato, carrots, peas and also ham, someone will always add something new in the recipe. I tried ham which tasted bad or the potatoes that were overcooked and didn’t look nothing like Russian salad. But there are many housewives who prepare this salad as good as the greatest chefs. Must admit that I didn’t like this salad for a long time and I never cooked it in my kitchen, but after some small changes in the quantity of ingredients I started to like it. Adding sour apple in this recipe it improves the taste. Now I make it couple times annually and everyone who tried it was pleased. 

Ingredients:
·         1 smaller can /12 oz/ sweet peas
·         1 smaller can /12 oz/ sweet corn
·         4 medium sized potatoes
·         Carrots 100g /3.5 oz/
·         4 eggs
·         4 large pickles
·         Ham 150g /5.2 oz/
·         1 sour apple
·         Sour cream 150ml / 2/3 cups/
·         Mayonnaise 300ml /1.2 cups/

Directions:
1. Boil potatoes in salted water. When boiled, dice potatoes into small cubes.
2. Peel carrots and dice them into small cubes too. 
3. In a deep bowl mix the potatoes and carrots. Open a can of peas, remove the water and pour into a bowl, also pour sweet corn from the can. 
4. Dice pickles into small cubes and add in a bowl. 
5. Boil 4 eggs and dice them into the same pieces as other vegetables. Also dice ham into small cubes. Peel an apple and cut into small cubes. 
6. When all these ingredients are mixed in a deep bowl, add sour cream and leave the bowl in the refrigerator to cool.
7. When vegetables are cooled, then add in a bowl 300ml of mayonnaise. Stir all ingredients well. Add salt if you think is required.
8. Put back the salad to cool a little more in the refrigerator.

Chinese Rice Salad




Chinese Rice Salad

Nice, refreshing salad that can be served as a starter or as light lunch or dinner. This salad can be a good meal to get rid of chronic tiredness of the summer. Vitamin C in lemon juice and other ingredients will increase the use of proteins, iron and calcium.

Ingredients:
·         White rice 1 cup
·         Water 350ml /1.4 cups/
·         2 tablespoons olive oil
·         2 tablespoons lemon juice
·         2 cups cooked, cubed chicken, breast meat
·         4 small pickles, diced
·         1 egg, boiled and diced
·         1 cup green onion, diced
·         1 red bell pepper, diced
·         Sour cream 200ml /0.8 cup/
·         Mayonnaise 100g / ½ cup/
·         Black pepper
·         Salt

Directions:
1.    Boil rice in water and add salt. Reduce on medium heat and cook rice for 10 min until water is absorbed.
2.    Rinse rice and place in salad bowl. Toss over chicken, and stir in pickles, egg, green onion, and bell pepper.
3.    In a small bowl mix sour cream, mayo, olive oil, and lemon juice. Stir and toss over salad.
4.    Season salad with salt and black pepper. Leave to cool in the fridge.

My family loves this corn salad recipe. This salad is rich in diet fibers that have multiple positive effects on our organism. According to the latest recommendations of daily intake of dietary fibers, they should be greater than 25g. Only portion of this delicious and creamy salad provide you half of the daily requirement. For vegetarian portion of this salad just leave out the ham and it will still be a delicious and rich flavored salad.

Ingredients:
·         2 cups sweet corn
·         Sesame 100g /3.5 oz/
·         2 medium size potatoes
·         Grated ham 150g /5.2 oz/
·         4 medium size pickles
·         Sour cream 100g /3.5 oz/
·         3 tablespoons mayonnaise
·         Salt
·         4 cherry tomatoes

Directions:
1.    In a skillet put sesame and cook on medium heat for a few minutes until gets golden, brown color.
2.    Boil 2 potatoes. Dice on small cubes. Grate 4 pickles.
3.    In a large salad bowl combine corn, ham, potatoes, sesame, pickles, and add sour cream. Stir all and add mayo and salt.
4.    Decorate on top with cherry tomato and serve.

Greek Salad




Greek Salad

I ordered this salad the other day at a restaurant and liked very much how it went with my main course. So I tried it at home, and it took me less than 10 minutes to make it. The salad is terrible simple it only goes 3 types of fresh vegetables and few leaves of lettuce. With the addition of feta cheese it’s a very nice combination of veggies, and I added black olives. I’m a big fan of olives, especially black so I sliced them and tossed on top. Everyone can make this salad. You only need 10 min to slice the vegetables and place them in a bowl. This is a nice vegetarian salad, very refreshing and quick to make. Greek salad is good if you’re watching your weight; it has little calories and can keep you full till next meal.  

Ingredients:
·         Tomatoes 100g /3.5 oz/
·         Cucumber 50g /1.7 oz/
·         Bell pepper 50g /1.7 oz/
·         1 onion
·         Feta cheese 50g /1.7 oz/
·         Lettuce 3 leaves
·         10 black olives
·         Olive oil
·         Aceto balsamic / vinegar/

Directions:
1.    Cut tomatoes, cucumbers and peppers into cubes size 1,5 x1,5cm.
2.    Cut onion into slices. Cut feta cheese into the rectangular shape size 2x1cm. Wash lettuce and squeeze out the black olives.
3.    Mix in a salad bowl tomatoes, cucumber, pepper and season it with olive oil, aceto balsamic and add salt. 
4.    Place lettuce on the plate first, and place spiced vegetables in the dome-shape. On top of vegetables add feta cheese equally, then the onion slices and olives. Sprinkle with oregano. For a nicer decoration on top, add a twig of French parsley.
