Chinese Rice Salad
Nice, refreshing salad that can be served as
a starter or as light lunch or dinner. This
salad can be a good meal to get rid of chronic tiredness of the summer. Vitamin
C in lemon juice and other ingredients will increase the use of proteins, iron
and calcium.

Ingredients:

White rice 1 cup
·
Water 350ml /1.4
cups/
·
2 tablespoons olive
oil
·
2 tablespoons lemon
juice
·
2 cups cooked, cubed
chicken, breast meat
·
4 small pickles,
diced
·
1 egg, boiled and
diced
·
1 cup green onion,
diced
·
1 red bell pepper,
diced
·
Sour cream 200ml /0.8
cup/
·
Mayonnaise 100g / ½
cup/
·
Black pepper
·
Salt
Directions:
1. Boil
rice in water and add salt. Reduce on medium heat and cook rice for 10 min
until water is absorbed.
2. Rinse
rice and place in salad bowl. Toss over chicken, and stir in pickles, egg,
green onion, and bell pepper.
3. In
a small bowl mix sour cream, mayo, olive oil, and lemon juice. Stir and toss
over salad.
4. Season
salad with salt and black pepper. Leave to cool in the fridge.
