Chinese Rice Salad

Nice, refreshing salad that can be served as a starter or as light lunch or dinner. This salad can be a good meal to get rid of chronic tiredness of the summer. Vitamin C in lemon juice and other ingredients will increase the use of proteins, iron and calcium.

Ingredients:
·         White rice 1 cup
·         Water 350ml /1.4 cups/
·         2 tablespoons olive oil
·         2 tablespoons lemon juice
·         2 cups cooked, cubed chicken, breast meat
·         4 small pickles, diced
·         1 egg, boiled and diced
·         1 cup green onion, diced
·         1 red bell pepper, diced
·         Sour cream 200ml /0.8 cup/
·         Mayonnaise 100g / ½ cup/
·         Black pepper
·         Salt

Directions:
1.    Boil rice in water and add salt. Reduce on medium heat and cook rice for 10 min until water is absorbed.
2.    Rinse rice and place in salad bowl. Toss over chicken, and stir in pickles, egg, green onion, and bell pepper.
3.    In a small bowl mix sour cream, mayo, olive oil, and lemon juice. Stir and toss over salad.
4.    Season salad with salt and black pepper. Leave to cool in the fridge.

Creamy Corn Salad

My family loves this corn salad recipe. This salad is rich in diet fibers that have multiple positive effects on our organism. According to the latest recommendations of daily intake of dietary fibers, they should be greater than 25g. Only portion of this delicious and creamy salad provide you half of the daily requirement. For vegetarian portion of this salad just leave out the ham and it will still be a delicious and rich flavored salad.

Ingredients:
·         2 cups sweet corn
·         Sesame 100g /3.5 oz/
·         2 medium size potatoes
·         Grated ham 150g /5.2 oz/
·         4 medium size pickles
·         Sour cream 100g /3.5 oz/
·         3 tablespoons mayonnaise
·         Salt
·         4 cherry tomatoes

Directions:
1.    In a skillet put sesame and cook on medium heat for a few minutes until gets golden, brown color.
2.    Boil 2 potatoes. Dice on small cubes. Grate 4 pickles.
3.    In a large salad bowl combine corn, ham, potatoes, sesame, pickles, and add sour cream. Stir all and add mayo and salt.
4.    Decorate on top with cherry tomato and serve.

Peach And Kiwi Cream Tarts




Peach And Kiwi Cream Tarts

The idea for this recipe I got when I walked past my favorite pastry shop. There I saw beautiful little tarts filled with cream and decorated with sliced pineapple and strawberries. Mini tarts looked so lovely and I wanted to create and bake these beautiful cookies in my kitchen. That’s the beauty of cooking and baking- you can always create and make your own mini tarts with a little creativity. The result was thrilling; pretty and lovely shaped sweet delights to which I added peach, kiwi, and blueberries on top. They look wonderful and taste excellent, also not difficult to make. A nice way to surprise someone with this mini fruit tarts.




Ingredients:
·         2 egg yolks
·         1 egg
·         Sugar 5 tablespoons
·         Baking powder 2 teaspoons
·         Butter, softened 180g / ¾ cup/
·         Oil 4 tablespoons
·         All-purpose flour 300g / 2.5 cups/
·         Milk 5 tablespoons
For Icing:
·         Heavy whipping cream 250ml /1 cup/
·         Sugar powdered 3 tablespoons
·         1 teaspoon vanilla
·         4 fresh peaches, sliced thinly
·         5 kiwis, sliced thinly
·         Blueberries

Directions:
1.    In a large mixing bowl combine egg, sugar, egg yolks, baking powder, oil, and butter and mix with an electric mixer. Stir in flour and milk and knead the dough gently for 5 min till it’s formed.
2.    Turn dough out onto a lightly floured surface and knead until smooth. Roll the dough into longular shape and cut into small portions.
3.    Line the dough into tart mould (I used 3 inch tart mould).
4.    Bake in a preheated oven at 180 degrees C /356 F/ for 20 min until brown color. When done, set aside and chill.
5.    In the meantime prepare icing, in a large mixing bowl pour heavy cream, sugar and vanilla and mix with electric mixer on high speed until stiff peaks form.
6.    Pipe whipped cream and decorate with sliced frut and blueberries on top.

Greek Salad




Greek Salad

I ordered this salad the other day at a restaurant and liked very much how it went with my main course. So I tried it at home, and it took me less than 10 minutes to make it. The salad is terrible simple it only goes 3 types of fresh vegetables and few leaves of lettuce. With the addition of feta cheese it’s a very nice combination of veggies, and I added black olives. I’m a big fan of olives, especially black so I sliced them and tossed on top. Everyone can make this salad. You only need 10 min to slice the vegetables and place them in a bowl. This is a nice vegetarian salad, very refreshing and quick to make. Greek salad is good if you’re watching your weight; it has little calories and can keep you full till next meal.  

Ingredients:
·         Tomatoes 100g /3.5 oz/
·         Cucumber 50g /1.7 oz/
·         Bell pepper 50g /1.7 oz/
·         1 onion
·         Feta cheese 50g /1.7 oz/
·         Lettuce 3 leaves
·         10 black olives
·         Olive oil
·         Aceto balsamic / vinegar/

Directions:
1.    Cut tomatoes, cucumbers and peppers into cubes size 1,5 x1,5cm.
2.    Cut onion into slices. Cut feta cheese into the rectangular shape size 2x1cm. Wash lettuce and squeeze out the black olives.
3.    Mix in a salad bowl tomatoes, cucumber, pepper and season it with olive oil, aceto balsamic and add salt. 
4.    Place lettuce on the plate first, and place spiced vegetables in the dome-shape. On top of vegetables add feta cheese equally, then the onion slices and olives. Sprinkle with oregano. For a nicer decoration on top, add a twig of French parsley.
